Keep half of the prop in the water and half above the water. Also try and keep the prop axis close to  parallel to the water surface.

Half the prop sticks out of the water.. Shouldn't the entire prop be in the water?

I think if the full prop is in water, the amp rating will increase due to increasing torque.Not sure.

Whats the point of having half the prop out of the water? If the current draw increases then wouldn't it be better to just change the size of the prop?

Surface drive actually improves speed and efficiency.  One blade in water would be faster than 2 blades in the water.hence the RPM would be higher.

Check out more information here.

@rooster
there is no use of surface piercing props unless the blades of the prop are thin.. but if prop blade has thick cross-section then it wil not pierce water surface.. also it only reduces the speed of the boat since only half of the prop is inside the water and thus you get only half the thrust as compared to the full prop in water.. so i suggest that the entire prop is immersed in water and the angle of the shaft must be as small as possible with the surface of the water...

The line of thought is something like this... the role of battery/ESC is to supply the power demanded by the motor.  And the demand by the motor is depending upon the prop used.  So you have to change the prop for a bigger dia and/or pitch, OR change the motor, to increase speed.  Now when you do either of those, your current requirements will change, and you have to remember that there are design limits on all of these components, so you cannot mix and match things arbitrarily.
