Title: Can we use gimbal/vector movement of motor instead of rudder/elevator/ailerons

Dear Experts/RC hobbiest/Flyers,

Does gimbal/vector movement of motor mount is an option of rudder/elevator/ailerons,
if you google rckite on the internet you will find that most of the rckites are controlled without using rudder/elevator/ailerons.
Please answer and suggest.

It's possible. But not on Planes. Just visualize how a plane would react if it's thrust goes in various directions It will fly like crazy. The wings are there for a reason. But If we want to try thrust vectoring, A motor far away from the cg can change the direction to an extent. But, It won't be even nearly as good as a control surface. If you search on YouTube, you could see many 3d jets doing thrust vectoring, It looks unstable as hell.Thrust vectoring is useful in some 3d maneuvers like the torque roll etc. But, It still won't replace control surfaces.

Does it mean, its good for RCkite as it don't have rudder/elevator/ailerons?

I thought that you were talking about planes, since you didn't mention about using on rc kites and you were a 'Plane Lover'. I have zero experience in rc kites as of now, let anyone experienced in rc kites reply.
