Yes, by updating firmware, the gimbal ports would be used for motor 7 & 8.
Yes scratch built frames would work. You can scratch build kind of professional frame, but would have to design it and use CF tubes, plates etc but its going to be a task if you are amateur. Buying an octo frame would depend on your budget, because price of good professional frames can cost you a lot. Havent seen Octo frames on any LHS'es. You can try sphere hobbies ask them, they do have hexacopter frames tho.

Please go through these links and do your homework. Read it thoroughly because most of the details are already listed.

"If it's man-made and it flies, it will crash."

octocopter is too much, its costly and power hungry. go for a hexa or a Y6

The frame design... pre assuming sth like a kg(including long landing gears)
my dilemma is:
which motors to use? need to lift an extra 3 kgs... will turnigy aerodrive dst 700 work? with 20 amp quattro escs? Max amp is 11 with 14.4v

also any suggestions for vibration damping?

Have you built any multicopters before. build some quads with kk board if you are new into multicopters. use some cheap materials and  test fly it. once you are confident with it then start building a hexa. bcoz a hexa is more costly and more powerful and you cannot directly jump into something big without trying basics.
for your budget, yes you can build a professional frame using aluminium tubes and a complete copter within 30K, even the budget could include a gopro gimbal and CF props. only if you choose the stuffs wisely. APM costs around 5k with gps, and the motors will cost you around 1k average per motor and esc around 1k each

so it should be 5000+8000+8000=21000. Lipo 6000 and other accessories and props will put you around 30000k with a scratch built frame.

Hi Ribz
I have made some 50+ multirotors by now. Well money is always an issue but believe me sometimes we cant be on the edge and avoid jumping the cliff.
when you say a professional setup the first thing strikes me is fail proof system. 30k is nothing, you gotta need atleast naza or ys xs controller, you need a carbon fiber frame or you compromise on weight with a aluminium frame, one way of coming out of weight issue is by using disc motor wth low rpm so you pull more weight with less amps but then you need low kv motors.... so bigger props....so bigger and slower frame. Now I dont see using anything less then Tmotors for a pro frame and good esc. that doesnt come under 30k. thats the fact. Rahul is very correct about the power situation and if you have money to put battery in parallel might as well put that nto motor and frame
am based in delhi, let me know if you need any help from me
cheers
